Christy’s Strawberry Margarita Cake

Christy’s Strawberry Margarita Cake

 

Cake: 

1 box white cake mix

4 eggs

½ cup vegetable oil

1 cup strawberries (chopped or sliced)

1 box wild strawberry Jell-O

½ cup Jose Cuervo-Strawberry Margarita (with Tequila)

1 lime

Combine first 3 ingredients with electric mixer.  Add Strawberries.  Beat.  Mix  Jell-O & Jose Cuervo.  (Jell-O may not dissolve completely.)  Add to cake mixture.  Add juice from lime.  (add zest of lime if desired.)  Mix all ingredients together.  Bake in 9 inch cake pans (3) at 350 degrees until done.  Cool completely. 


Icing:

1 – 8 oz. cream cheese

2 cups powdered sugar (sifted)

2-4 limes

Cream cheese should be room temperature.  Beat with mixer adding powdered sugar slowly.  Add the zest of 2-4 limes as well as juice from 1-2 limes.  Mixture should be thick.  Ice cake and chill.

STRAWBERRY CHOCOLATE ÉCLAIR CAKE 

 

1 LARGE INSTANT VANILLA PUDDING

8 OZ.  WHIPPED TOPPING

GRAHAM CRACKERS

2 CUPS STRAWBERRIES

2 CUP CONFECTIONERS SUGAR

¼ C. BUTTER

¼ C. COCOA

MIX PUDDING ACCORDING TO DIRECTIONS AND FOLD IN WHIPPED TOPPING.

LAYER GRAHAM CRACKERS, PUDDING AND STRAWBERRIES.  END WITH GRAHAM CREACKERS ON TOP. 

MIX 2 CUP CONFECTIONERS SUGAR, ¼ C. BUTTER ( MELTED)

ADD ¼ COCOA AND STIR.

SPREAD ON TOP OF GRAHAM CRACKERS AND GARNISH WITH STRAWBERRIES. 

CHILL OVERNIGHT AND SERVE.

Strawberry N Crème Cake

 

3 cups sugar
3 cups all purpose flour
¼ tsp baking soda
¼ tsp salt
1 cup butter, room temperature
1 – 8 oz sour cream, room temperature
6 large eggs, room temperature
2 tsp vanilla

Place above ingredients in a bowl.  Use large heavy duty mixer.  Beat at low speed until blended.  Beat at medium speed until well creamed.  Pour batter in large tube pan sprayed with Bakers Joy. 

Bake at 325 degrees for 1- 1 ½ hours.

 

Cut cake cross wise into four layers.

Filling:

12 oz. Cool whip
16 oz. Sour cream
2 cups 10x sugar

Mix with hand mixer.

3 cups sliced strawberries sweetened to taste

Frost cake with additional cool whip.
